- This soft white wheat is low protein usually around 6-9%
- Less Gluten then most hard red wheats
- Great for cookies, muffins, cakes, pancakes and pastries
- Fluffier whiter flour with less density
- Does not make a great loaf of bread not enough protein and gluten
